The fishing season is limited to early March-late June, when anchovies have the best organoleptic characteristics and reach the perfect balance between meat and fat.
As per tradition, our certified Cantabrian anchovies are hand-processed, filleted and preserved in oil, and they are ready to eat as a salty snack or as an ingredient for delicious recipes.
